My mother is diabetic I saw Emeril use Agave nectar as a sugar substitute . We decided to try it, you don't get the problems like heat destroying sweetness like it does with Equal or the diarrhea Splenda can cause.I would reccomend this product for dieters and diabetics.

Do either of you know why this is better for diabetics? I just looked at the nutritional facts and it says that sugar has 12 g of carbohydrates per tablespoon and agave nectar has 16 g. I've seen agave a lot in specialty foods. Yesterday I saw an agave maple syrup.

I'm just wondering if it digests differently or something?

Just answered my own question. It has a low Glycemic Index #. Table sugar is 65 and here's a table I found.
