If you have home-grown tomatoes, I envy you, and here's one way to use them.
Israeli Salad
Ingredients:
4 large tomatoes
2 cucumbers
2 bell peppers (1 green + 1 red, yellow or orange)
1 small red onion
1/2 cup parsley, chopped finely
1/4 cup fresh mint, chopped finely
4 Tbsps olive oil
1 lemon, juiced and zested
Salt and pepper to taste
If you have English cucumbers, you only need 2, for Persian cucumbers, use 4 or 5 because they're small. With either variety you do not need to peel or seed. If using regular cucumbers, use 2 or 3; peel and seed.
Finely dice cucumbers, tomatoes, bell pepper and red onion into 1/4" inch cubes; add chopped parsley and mint (optional). Gently mix together in a large bowl. The whole key to this salad is a very fine chop on all the ingredients.
Drizzle with olive oil and lemon juice; salt and pepper to taste, and add lemon zest. Stir gently to combine.
