Ingredients
4 tablespoons olive oil
1 pound smoked sausage, such as Linguica or Spanish chorizo, large diced
1 yellow onion, chopped
3 garlic cloves, crushed
2 teaspoons chopped fresh oregano
1/2 pound plum tomatoes, chopped
2 tablespoons chopped scallions, white and light green parts only
1/2 cup all-purpose flour
4 large eggs, beaten
Kosher salt and freshly ground black pepper
1/2 cup Greek-style (plain) yogurt, for serving

Please note that before making you could peel a cucumber, dice 1/4 cup & add to yogurt for a cucumber sauce. This must set together for 45 min. to combine the flavors. ALSO, you could use a wheat flour.



DIRECTIONS: Coat a skillet with 1 tablespoon of olive oil and place over medium-high heat. Add the sausage and sauté quickly to render juices. Add the chopped onions and cook until translucent. Once the onions are soft, add the garlic, oregano and tomatoes and cook slowly for 5 minutes until well combined. Set the mixture aside to cool. Once cool, add the scallions, flour and eggs, Fold together with a rubber spatula until well blended; season with salt and pepper.

Place a large clean skillet over medium heat and coat with the remaining oil. When the oil is hot, drop large spoonfuls of the batter into the hot pan. Press down with a flat spatula. Cook for 3 minutes, then flip over and cook the other side for 2 minutes until golden. Serve the Greek Tomato Patties with a dollop of yogurt on top.
 
Is that the same yogurt sauce you guys used on the Gyros at Dubltyme? I loved that stuff.
 
All we did was make & use plain yogurt. We put the milk in a double boiler and cooked it till there was a skin on top & approx 180 degrees. When to milk cooled to 105-110 degrees we would add a culture (any plain yogurt) to it. Cover the pot & let it set out at room temp till the next day, then refrigerate.

That is how you make yogurt. When you add the culture if you like it sweeter than milk than add a little sugar. This is also when you add the flavorings. DO NOT ADD THE FRUIT AT THIS TIME.

You can serve this over fruit, or eat plain.

When you are getting low on your yogurt supply than boil more milk & use your last batch as your culture.
