I'm embarrassed to admit that I don't understand what is "normal" for peak and gradient. Two years post aortic valve replacement (carbon) my peak gradient is 50 mmHg and mean is 30 mmHg. I've tried reading about it on the internet, but feeling a bit dense.

Normal for gradients is low or none. Before my OHS, my mean gradient was approaching 40 mmHG, when I became symptomatic. Post surgery my mean gradient is 7 mmHG. Your gradients seem quite high for a replacement valve. More information about gradients can be found in the ACC/AHA guidelines:

Repeat valve replacement is indicated for severe symptomatic prosthetic valve stenosis.
