A butt usually weighs 6-8 lbs.

That's a hunk a meat! I might consider that next time my in-laws are here. They are large people. In photos with me and them one is tempted to ask, "who's the little guy in front?" (I'm 5'10, 185). I out eat all of them though. Will you send me (or post) your recipe?

Yes there are many low sodium soy sauces out there. The #1 rated low sodium soy sauce, FOR FLAVOR, as founded by The American Test Kitchen is Lee Kum Kee. Also my favorite.

Thanks, I've not heard of Lee Kum Kee and will get some.

And JeffM I think your mortar and pestal is what we call a molcajete. Your soaked hickory chips sound really flavorful. Down here we add mesquite chips too.

Goat chops?

it's very good if cured right to lose the goat taste. ate some prepared by a Cuban in the Cuban way and it was definitely delicious.

made one of those rolled/tied roasts last night. I make mine top stove in large covered pan without any seasons, including no salt, and it comes out moist and very tender.
