Couldn't help but think of Bina when I saw this.

Creamy Feta Chive Salad Dressing

1/4 cup feta cheese
2 T white wine vinegar
3 T chives, chopped fine
1/3 cup olive oil
Fresh ground pepper

1) Mash feta with fork until smooth
2) Place everything in a jar with lid and shake well
3) If too thick, thin with a bit of water or plain yogurt
4) Serve over salad greens
 
That sounds yummy.

I bet I can swap the Feta (at 350+ mg sodium/ oz) for some nice chevre (about 120 mg sodium/oz).
Bina, you wanna ship me a couple hundred pounds of chevre? It's my weakness.
 
You sure could swap the chevre for the feta. I didn't think of it until after I posted the recipe, but this is pretty much how I make blue cheese dressing. I don't buy salad dressing, mostly because of the dubious oils in them and all kinds of other stuff. Homemade dressing will last refrigerated about one week.
